Dispatch's Mango Amba Sauce uses mangoes fermented in three ways - fruit, pits, skins. The fruit and brine from the other two ferments are combined with the brine of fermented onion and garlic. All of this is pureed and brought to a simmer over medium heat. They add fenugreek, turmeric, chili, coriander seed sugar and vinigar and salt. It is a deep mango flavour with that fenugreek punch. Sweet and acidic.
It's perfect for saucing all meats and fish. Great in sandos and on sausages. Try some with some Chanan-washed Water Buffalo Tomme!
