Hops - little fresh cones of wonder that add beautiful flourishes of aroma, bitterness and flavour to beer. Working with Ladycone Hopyard in Hamilton, Ontario, we selected fresh, whole cone hops at harvest, taking them from right off the bine and straight into the kettle to brew What They Do, a refreshingly hop forward amber ale using classic ‘C’ hops - Cascade, Chinook and Comet - for a sticky citrus profile of grapefruit with gentle pine balanced by a biscuity malt character.
